Best Biryani in the world?

I came across this Hindu Biryani. Looks awesome. Is this how genuine Biryani is made? Indian members replies sought?


There is no such thing as hindu biryani, each region India has its different type & style of cooking biryani. Some are known by their places of origin, some by flavor and some puloa's even masquerade as biryani.

Well, I know that. Food has no religion. But many here think food does Shahada. So to I could not resist taking a pot shot at them. And I agree Biryani in it's differant iterations is Indian as Modi. What I want to know is what sets it apart from Pilau?

I distinguish based on rice used, biryani is always cooked in basmati type rice/very fine grained rice and final dish when cooked properly does not become sticky rice. For biryani rice and spices with meat is cooked separately. Then they add the hot cooked spices to cooked rice in a layered manner and allow rice to absorb the spices in a container which is tightly sealed.
It is more like cooking lemon rice.

Puloa is easier to cook in one shot like cooking rice instead of plain water you have vegetables/meat along with water. Puloa is cooked like any other curry and they add uncooked rice at the end. The end product is bit lumpy and sticky unlike biryani which is very much layered. Puloa is more spicier than biryani and spice overwhelms the rice.

Again it differs from region to region, in southern India except a few including hyderabadi biryani rest of them are pulaos which use local rice varieties.
