What do Turks think of Byzantines?

Evil or Good? Since Turks live for 700 years near the 'Rumi' how did they alter Turkic Culture, New loan word in the language, food etc?

Until population exchange Turks and Greeks had been lived together. After 1923 all Muslims have left with us but Christians even Christian Turks have been sent to Greece .

Although they are so little number, i don't know how couldn't we convert them to Islam it's really shame for us.
An example for your question nearly all fish names are Greek origin in Turkish. In contrast they are still using Turkish words for traditional Turkish foods such as yoghurt cacik ayran etc. There are countless historical roman and byzantine era ruins and churches in Anatolia but you can not see a single mosque in their capital. Certainly there are culturally similarities between two nation, at the end we have different beliefs and religion.

Byzantine empire was just the continuation of the Roman empire,after a couple of centuries the Greeks took over thats why the namechange.
So the culture was more a mix of roman,greek,arab german in those times.
Even for 2 centuries Greeks were not in,they had to recapture the greek territories from the arabs.
We could say it was a multi culti empire,like many empires before and after.
It is normal that you take some things from each others culture.
It mostly starts with a marriage.

Did the Turks do the same? Or Did Persian Culture and literature from the Sejiulk era have more impact than Byzantine?

I probably should not be commenting on this matter but I think Persians had way more influence on the Turks than the Byzantines did. Just my 2c.

Arabic culture had the most influence, only recently during the Ottoman times we switched to modified alphabet of Persians.

For example, to name years Turks used either Turkish numbers or Arabic numbers. Years Semanine = 800. Persian replacements arrived later.

This Chinese is obsessed with Turks, every post of his is about Turks. he may discovered one of his Great Great parents was a Turk. We should enlighten him as much as we could.

About loan and learning issue both nations learn from eachother normally Turkish and Eastern Roman relations even some Turkic soldiers became join to Eastern Roman armies as mercenary. Turks mostly mixed of course without forgetting their background and culture,you guys can clearly see that if you read books of Jean Paul Roux about Turkish History especially main units of army always remain Turk.

Especially in Abbasid period became win&win for both sides but in Umayyad Period bloody wars always continue between two sides to understand Turks at that times reading The Crusades Through Arab Eyes by Amin Maalouf will be pretty good to understand our ancestors than Turks start to take over cities & governments Seljuk and Mamluk Empires pretty good example (their offical name was Dawla al-Turkiyya which means state of Turks)

"Yağı" instead of "Düşman" ("Düşman" also exists and are commonly used), "Od" instead of "Ateş", "Düyü" instead of "Pirinç", "Başçı" instead of "Reis". Also "Yaraq" instead of "Silah" ("Silah" also exists and are commonly used), although it's meaning has been altered to "penis" in modern-day Turkish.
