My favourite dish - Parotta




Wow. Those were lovely videos. Maybe they can be employed as fielding coaches for the Indian cricket team. LOL
BTW, the Tamil immigrants took the "parota' with them to Malaysia and Singapore and added it to the local cuisine.
Only there it is called "Roti Prata". And there is a similar version in Indonesia as well called "Martabak". All are served with a thickish curry. And very tasty. :)
One difference between the North Indian and South Indian Paratha/Parota is that the S.Indian version is nicely coated with oil, while in the North it is drier and the fat/ghee is used only to keep it pliable to roll or pat out.

Actually I dont think there are 'Parottas' (not parathas) in North India in the sense I mean the North India 'parotta' are not layered unlike their South Indian cousins. Or are they, Not sure ?

Even in South there is a difference b/n Kerala and TN parottas. Ours is small in diameter, more thick and more layered while the Mallu parotta is larger, slimmer and less layered.

More than that gravey called 'kurma/salna' is free in TN while you have to buy it in Kerala.

Yes the Parathas in the North are also layered which is called Lacchedar Paratha which is mainly maida based (like the South). The Wheat atta Parathas are not so layered. Actually versions of the Paratha are found else where also, e.g. West Bengal or Maharashtra. But they are less layered and less thick.

You are correct about the "Kurma" or "Salna" or "Salan" (in Hyderabad).
In S.E. Asia it is free as well. Or for that matter even in the North.

If you visit, Bombay/Mumbai, then try the "Baida Roti" at "BADE MIYANS" in the by-lanes of Colaba, behind the Taj Hotel. It is (really) thick, stuffed with mince-meat (kheema) and has a nice coat of a beaten egg.
And there is a similar version (minus the Kheema) to be had at "NIZAMS" in Calcutta. Abir/Indian Jatt (may be some others too) will tell you more about it.
 
recently a friend went to india and got banana chips... loved them. they were the raw banana kind.

love all the food that's been posted here, have had most of it. but still have to try out idhli sambhar.

how is that white thing to tatse?
