First I will start with UAVs already in the making although not entirely 100% Saudi but it is a step in the right direction:

This news article says there is a cooperation signed between KSU and Al-Salam Aircraft industries to manufacture UAV with all its parts.

Arabian Aerospace - Selex Galileo signs double radar deal with Saudi technology city
This one says we got the PicoSAR radar Technology which is generally used in UAVs.

These are just rays of hope for good things to come Inshallah.
