First of all it was not the Seljuk turks but rather the Mamluks they didn't only defeat them once but defeated them in several wars and the Mughals got defeated again after that in Delhi Sultanate..

Yes the Mongols ended a Muslim Golden area but also started another Muslim golden area as soon as they got defeated. The mongols didn't last long by design there entire stay was like 20-30 years of continous war then they themselves converted to Islam meaning a new Golden age was born out of that period itself..
