It was the non muslims that contributed to the initial rise and sustainment of the ottoman empire and you haven't stated a point to the revenue part i mentioned, it was the non muslim populations that contributed the most and muslims, who were considered first class citizens of the empire, paid a lot less in taxes. It was the christians at first and greeks and even later it was a significant portion of them who were manning the ottoman navy, where did you learn how to sail in the steppes of central asia? It was the christians of the eastern roman empire(greeks, armenians, etc) who were educated enough to take many administrative posts and run your empire, later converting to muslims either because they wanted to ascend the government rankings or by force.
Of course it was also the non muslims later enough that contributed to the loss of your empire, but that was the tip of the iceberg only, the real reasons were other and most of them had to do with you, a muslim medieval ottoman empire that couldn't transform and compete with the other western powers in terms of economy, technology, education, corruption and social reforms, the economic strain to the empire led to a bigger economic burden to the non muslim populations, which along with the trend of the fall of multinational empires and the rise of nationalism led to the revolts that smashed your empire.
That's what smashed the eastern roman empire as well and not the seljuks alone(the tip of the iceberg as we said), economic and military decline, corruption of the bureacracy of Constantinople and the big economic burden on the provinces in order to sustain Constantinople, what do you think, that the seljuks could have stepped in anatolia after only one military defeat(Manzikert), if the native populations of the provinces were pleased and loyal to the death to the idea of the empire?
Take for example the start of the roman empire, the romans lost to Pyrrhus of Epirus 3 times and still kept recruiting and sending armies against him, till he eventually lost, or even more take the defeats and casualties inflicted on them by Hannibal, who crashed their armies numerous times, the local populations believed in the idea of the empire and the glory of Rome and supported it economically, militarily, etc with everything they got.
As a result the romans were a machine willing to learn from their mistakes and win at all costs no matter the casualties recruiting and sending more and more armies till Hannibal was brought down to his knees. The eastern roman empire later almost destroyed by the persian sassanid empire after many defeats rose up with Heraclius and with the local populations supporting the empire and what it meant to them and led to a totalitarian war deep into persian heartland which restored the empire.

Russians pretty much raped, pillaged and destroyed everything on their way throughout history and look at how big they are now. Yeah, sure the local merchants would've perished and the land could've been lifeless for a few decades but new people would fill in and create a new society. We could just simply seize everything in the region which we didn't (turns out BIG mistake) considering how savagely the Balkan nations tried to murder the Turkish populace once the empire had crumbled.
The reason why "Modern" Turks look different is because of the migrations after WW1 and not mixing with local Greeks or Armenians. Millions of migrants had to retreat to Anatolia from Balkans, Caucasus, Crimea, and parts of Eastern Europe. That's why "Modern" Turks look so much different. Besides Anatolian Turks (Oğuz) don't come from the Altay mountain but rather from today's Turkmenistan area and look shockingly similar to them.
Oh c'mon you want to say that the modern turks appearance is a result of the last 100 years only and for about a thousand years(when you stepped close and then in anatolia) till WW1 you were the same in appearance as before?
There were many mixes at first with the close to the seljuks persians and later after the step in anatolia with the native populations of the eastern roman empire, many of whom assimilated converting to islam.
Your whole janissary corps was from children from christian families. The muslim refugees from the balkans just sped up the whole genetical transformation process, they didn't start it however.
