very nice setup mate. as for memory, here is how I select: check the max DDR3 frequency supported by the motherboard (stock clock), then look for memory at that specification with the lowest CAS timings.
Size of course depends on your needs.

this is what I am running currently: G.SKILL Trident X Series 16GB (2 x 8GB) 240-Pin DDR3 SDRAM DDR3 1600 (PC3 12800) Desktop Memory Model F3-1600C7D-16GTX - Newegg.com
1600mhz with a CAS of 7.
