Onion and Garlic grow underground and harvesting them means killing the plant itself. Unlike fruits and Vegetables and grains and pulses that grow and can be harvested without killing the plant.
Similarly vegetables like potato, carrot etc which grow underground and cannot be harvested without killing the plant is to be avoided in a strict Hindu diet.
A meal which causes minimal damage to life is called a "Satvik" diet. or a pure diet. Other being rajsik and tamsik.
In the past brahmins and those who concerned themselves about living right tried to inculcate a strict satvik diet.
Its only after the advent of the christian british that there was a major disruption in Indian diet due to forcible cultivation of non food items like opium and Indigo by the british.
Even then the Hindus managed to hold on to a strict Vegetarian diet that again caused minimum damage to other life around us. Even the Hindu Fishermen of Mumbai were Vegetarians during british rule and that should tell you something.
The other major disruption in India food habits came after the advent of COMMUNIST in India that choose to denigrate anything "Hindu" since it posed a challenge to the communist ideology.
Also due to killing of milch animals and general degradation of environment, the nutrients value of fruits and vegetables grown in India as fallen by 40% so the general diet and health has suffered. This started the introduction of eggs into the Hindu diet system and lifestyle.
So do you guys not use pesticides on your crops?
