Bangladesh now counts on cattle; large-scale meat export planned

Load of crap, we in NE and BD to my knowledge use lard(pork and beef) and mustard oil to cook our choice of meat unless the recipe itself calls for a neutral flavoured oil. I gather that you have been out of BD for a while, so let other BD members refute me.

Heck, even your local variation of pulaos like Tehari are cooked in mustard oil. I am probably double your age kiddo(you are just learning the trade of medicine) and have a keen interest in cusine for decades, so you need to learn more.
so you're telling me mustard oil spoils food flavor? yet to saute the onions and other stuff... people use mustard oil in pulao.... but ghee is an important ingredient... heck lard although not commonplace anymore is still the right way to go when cooking beef or for pulao

Maybe not for you anymore, but we use still use lard to cook our meat.

And about mustard oil, it should ideally complement the recipe by lending a robust flavour but you folks add more than what is necessary. Ever wondered why the beef in your country of residence tastes better than the ones in Bangladesh. It's because they don't add a truck load of unnecessary spice and oil to everything to ruin a flavourful meat.
 
I reckon you’re from NE, judging by your extensive NE experience in that case I should say to you, don’t knock it until you’ve tried it kiddo... India is the whole world to you but for me I’ve seen much more.
Anyways.... first off you should use lard or ghee and not mustard oil to cook beef. Mustard oil is for things like fish

Mastard and Naga pepper actually gave the aroma when he was not using any Garam Masala. I dont think Ghee will do any better.

There are lots of different ways you can cook meat. One favorite is Kurma cooked with Yugurt and without spices and lots of ghees. There are lots of different dishes but most commons is Kosha gusto that you saw in the video.

Brother, if you are really a meat devouring carnivore try cooking your beef in its own fat without any oil, adding a medium sized onion, crushed ginger, sichuan peppers(don't know the Bengali nane, mejenga in Assamese, Jabrang in Bodo) and of course the terrifying Bhut Jolokia for piquancy and flavour. You won't be disappointed.

Look at the Pukhtuns for examples, they are voracious meat eaters like us in NE. But their traditional recipes like namkeen gosht, Peshawari Karahis and dum pukhts are simple to make without all the unnecessary spices of the Punjabi and Bengali cuisine. Flavour of meat should stand out in any meat dish in my opinion.

kurma and roast is like two of the most common and easy methods of cooking bengali meat based food.... :)
