My uncle is in his 70s, so i am guessing places of religious, cultural significance, scenic beauty etc

These are places I would suggest

Reunification palace
War remnants museum
Mariamman temple
Emperor jade pagoda
Ben thah market
Pham ngu Lao - backpackers area where I stayed as well - it is walkable from Ben thah market and mariamman temple.

Because he is around 70s I would not suggest dinner at Ben thah market- the market itself closes in the evening but night market is there outside which he need to check out
