Science doesn't say that they are correct and a particular statement is absolute truth. Science is the discourse of asking questions and making inferences based on evidence and empirical data.

Some years down the line if new evidence emerges contradicting old theory, it's rejected.

It does not. That is what makes it science and not a "law" or "belief". What was being questioned in the above post was the "science is definite" claim against "religion or beliefs of one are definite for him/her" argument which as you yourself explained is not correct.
