what the hell i should do with my goat leg . i do not want BBQ i have eaten som turkish resturant few months ago they served me full goat leg with rice it was really nice but don't know how they cooked :disagree: i am worry since morning how do i eat it :hitwall:


I enjoy cooking... Actually i do all the cooking on the weekends at our house.

1. Braise the leg in a pan at hight heat. Get a good a good browning on the leg and pan.
2. Remove leg from pan and put aside.
2. The hot pan under low heat... deglaze it with broth... If you drink alcohol... Deglaze with a red wine. I don't drink anymore so i now skip this and use vegatable stock with a bit of apple cider vinegar.
4. Let add onions, celary and carrots ... Saute
5. Add garlic, cumin, and any other desi masala & spices you like... I recommenusing cinnamon and bay leaves and cloves...and season salt and pepper... And fry gently... Max 2-3 min
6. Add a can of cranberry sauce and plenty of liquid (chicken broth or water).. fill it till you think the leg would be covered... You can add herbs like mint and rosemary now as well (easy on the rosemary as it can overwhelm the flavor - very little)
7. Now add back the leg to the pot cover with a lid or tin foil
8. Put in oven at 380 for an hour's or so.

Enjoy... My kids and wife love this recipe

goat leg tandoori at home

Ingredients for 8 servings

2 pieces of goat legs (shanks are removed and not cooked with them)
1 teaspoon fresh thyme leaf
1/2 teaspoon black pepper
1/2 teaspoon cumin
1 teaspoon fresh rosemary leaf
5-6 cloves of garlic
Salt

How to cook

Heat the oven to 250 degrees Celcius
With a pointed knife, poke the buds through certain places and put the garlic cloves into.
Rub thoroughly with spices and salt.
Pack the meats with two layers of oven cooking paper.
Pack the outside in the same way with aluminum foil.
Place it in a ovenware where the meat can fit.
Drive to the middle floor of the oven and seal the meat at high temperature for 10-15 minutes.
Cook in the oven for about two and a half hours after lowering the temperature to 170 degrees Celcius.

result was good sir pic begum ne banai thi mang ker upload kerta hoon . i like it but we made a bit spicy :enjoy:. but was good may be few times we try and it will be perfect :dance3:
Great! Please do share the picture.
As for spicy, The original Turkish dish however is light on spice, very light i would say.

We do tend to turn the "imported" dishes a bit more spicy, it may spoil the authentic taste but who cares as long as you like taste of the locally improvised dish is good, even better most of the times. I will take it.
