ISLAMABAD (APP) - In Pakistan, annual production of honey is about 10,000 tons and about 15-20 per cent of honey is lost due to the ignorance of the hunters and traditional beekeepers. The traditional beekeepers have very little knowledge about the extraction and processing of honey and they need to be imparted proper training in order to produce maximum honey.

A statement issued by PARC here on Wednesday said that as the honey industry is flourishing in Pakistan there must be some rules and regulations for the production of export quality honey to increase the export.

The regularity authorities must be there for the implementation of these rules. It is very essential to bring the Pakistani honey up to the standards of international market.

Honeybee Research Institute, NARC, organizes training courses for the beekeepers to teach them for the production of good quality honey. The honey must be free of antibiotics and pesticides. The beekeepers must use the antibiotics for the treatment of bee diseases at proper time and in proper concentration. The beekeepers must remove the hives before the spray of pesticides in order to avoid the contamination in honey.

The honey must be stored in food quality canes at lower temperature to keep the quality of honey.

Honey is a natural sweet product of the beehive. Due to the high medicinal and nutritional value of honey man gets great benefits from honey. The most common raw material for honey is nectar and other natural plant exudations. Nectar is a watery solution of sugars and originates in floral as well as from extra-floral nectories of plants. Bees also make honey from honeydew which is a sweet secretion of insects.

The major components of honey are the sugars (about 80%) and water (17- 19) and minor components which make up only small part of the total components.

Important minor elements are minerals, enzymes, lipids, amino acids, proteins and organic acids. These minor components of honey determine the aroma, flavor and color of honey.

The composition of honey determines its value as nutritional and medicinal product. Physicochemical properties of honey are also determined by major and minor elements. Several of these properties like moisture, viscosity, electrical conductivity, sucrose, and glucose are of great importance in honey industry as they influence the quality, texture and granulation period of honey.

Moisture is the major factor which determines the keeping quality of honey. If t he moisture is more than 19% it is more prone to fermentation and deteriorates in quality. The fermented honey becomes sour and has a foamy layer on the top. In advanced countries honey fermentation is prevented by pasteurization and storing in sealed containers. Due to the lack of facilities in Pakistan the fermentation of honey is prevented by heating the extracted honey for 30 minutes at 60 C in water and bottling in air tight containers.

So if that production figure is correct, Paksitan ranks just behind Italy and ahead of Cuba.
