Magic of Nehari !

Wrote myself man! I have written the full recipe @Farah Sohail aur aap ke pur zor israar par and it is in my word file right now. But I have promised that the full recipe will be posted once Panama decision is out. Agar Pakistan ke haq main aaya tou khushi main khana aap log, agar Pakistan ke khillaaf aaya tou Nahari kha ke gham ghalat karna..

By the way, once these spices are mixed in the required ratios, the rest is very straight forward and quick...

ایک سے لیکر پندرہ نمبر تک کے مصالحہ جات کو بلکل باریک پیس لیں- مصالحہ اتنا پسا ہونا چاہیے کہ پاؤڈر کی شکل میں آجائے- پھر باقی کے مصالحہ بھی اس میں شامل کر کے ایک بار پھر مشین میں ١ منٹ تک پیسیں-

Thankk youuu soooo much ... Meat ki quantity abhi nahi likhi aap ne? Chalein..baqi ki recipe ka kal intezar rahay ga.... Aur plzzz pani kitna daalein, galanay aur gravy k liyr, aur phir aata kitna daalein...ye bhi zuroor batayr ga...i know, it sounds lame :lol::lol: Lekin main jab nihari banati hun tu texture nihari ka sahi nahi aata..jaisy restaurant style nihari ka..tu shayad is main hi garbar karti hun... Waisy thanks...

You have pressure cooker? I will tell you the quantity of water for cooking in pressure cooker. To be on a safe side, make 1 kg beef nihari initially.. beef shank to be precise. Abhi nalli nihari na banaein, pehlay simple nihari ka tajarba karlain.. Namak and Mirch you can adjust as yahan jo namak milta hai it is different and lahori namak in Pakistan is different.. Red chilli powder bhi dekh kar lena hai.. actually pissay huay jitnay masala jaat hain, yeh best quality ke honay chahien kyun ke agar milawat shuda huay tou phir kaam kharaab hojaega hojaega..

Abhi nalli nihari na banaein, pehlay simple nihari ka tajarba karlain.. Namak and Mirch you can adjust as yahan jo namak milta hai it is different and lahori namak in Pakistan is different.. If there is no beef then there is no Nihari. There is no better place to eat Nihari than Karachi
Actually Nihari is made from Bong ka gosht. And may be from any animal, mostly from beef, but not necessary. In Karachi we make mostly from Beef.

No it's not for one kg.. In one kilogram of meat, you have to use 4 heaping tablespoons of the prepared mix..

Also, the ingredients should be measured as heaped tablespoons/ teaspoons..

I usually prepare in pressure cooker, as it gives me the right tenderness of meat in short time. Try using pressure cooker first time and then you can prepare as you like.

Texture shayad iss liey sahi nahi banta kyunke aap aata baghair tari separate kiey daal deti hain.. To bring the best texture, you will have to remove bones, meat and tari before adding flour.

Aur floor gradually add karsakti hain.. I like light nihari rather than buhat ziada thick.. buhat thick nihari bhari hojati hai khanay ke baad. But you can gradually add flour paste, every two minutes until you get your desired texture, and the taste doesn't change. Sometimes, for the texture, people add more flour, and then in Nihari a person can smell and taste flour more than anything else.. which is wrong.. texture ke chakkar main taste bhi kharaab hota hai aur bhaari bhi hojati hai.. So i will tell you how much I use, but you can add more gradually if you like.. once you have added flour and stirred nihari for approx. 15-20 minutes, you will have to add back tendered meat, and marrow separated from bones (I add bones without separating marrow as I love extracting it in my plate lolll). Phir pyaaz ka tarka lagta hai.

One thing that I do special is that when I separate meat from gravy, main charcoal ka dam deta hun meat aur marrow ko.. But you can avoid it if you don't like.. It adds a different charcoal smell in the meat and the taste enhances exponentially.

translation gentlemen please. i had requested for receipe. i want to cook this weekend. kalahari meat is just great taste. I am sure if i try kudu meat it will be spectacular.

also what spices you blend together. I will cook in the backyard where there is a large braai place.

hmmmm nai actually. Yeh tu ingredients han and isi thread mein post kia hua thy. Yeh mil gy mujy. I thought yiu shared the full recipie written in urdu font as well.

Is post mein b end mein you mention "baki recipie baad mein" :P. wo dhoondh raha hoon asl mein if you can help. Agr pari hoi ha tu dobara post kr do yahan??

Magr kr agr aj do ty it wwill be great. :P

My sister makes the best nihari ever! No restaurant beats it. It's takes a whole day but my god it is worth it. Due to its duration we only stick to it during special occasions etc
