The Crusades started when a really stupid Pope gave a speech inciting all Christians to capture Jerusalem with promises of "absolution and a glorified afterlife in Heaven" if they took the fight to the so called holy city. Jerusalem was until then ruled by the Muslims and was then a peaceful city which was extremely tolerant of all faiths. During the Crusades, the Muslim armies applied the utmost chivalry and rules of war.
