The gap is def. smaller than the 60's and the 70's.
Also the way of air war is different. Right now in air to air Israel is betting on it's superior A2A missiles. Israeli A2A missiles are superior in every way than their American counter parts. Did you know that Israel even refuses to give the Python family technology to the US for fear it will be sold to Arab countries? If it came to A2A and I had a choice between AMRAAM and Python-4 I would pick to arm my plane with Python-4s.
For instance it's not superior Israeli pilot skills and super human capabilities the reason they won the Dogfights as they like to publicize it is in fact the Safrir missile that was better than the Russian missile armed in the Egyptian Migs. That among other things like for instance they sent their planes on a 4 hour low flying over sea route just to flank the Egyptian jets which was a very successful strategy.
