So you are willing to listen to the fringe fanatics among Muslims but not the mainstream because what you are saying is basically what a fringe would say and even then , they might not agree in all of them.
I don't see majority of Muslims blaming all Jews and Christians either. And besides south Asia, most Muslims might not even have any acquaintance of who Hindus are.
The problem is that some people take criticism of Israeli actions or criticsm of Israelis who support those actions as criticism of Judaism or Jews which is wrong. Similarly, there are some muslims and probably non-muslims who see the conflict as a Muslim Jewish conflict instead of an Arab-Israeli conflict which what it is in reality.
Otherwise, Jews are the closest in religious practices to Muslims. Muslims can eat kosher while many Jews eat halal food. Strict monotheism, following religious laws like halakah for jews or shariah for Muslims and spiritual paths like kabbalah for jews and sufism for Muslims are some of the many common aspects that are present. One of the reason why many of the early Jewish migrants and traders that came to India use to live in predominantly Muslim enclaves as they felt more comfortable there.
The last 60-70 years of conflict is basically an anomaly for Jews and Arabs compared to the past 100s of years of Jewish conflict in Christian countries in Europe for example.
There is an undercurrent of Islamphobia post 9/11 and almost all sane people admit to it. This does not mean everyone in the west or Europe is Islamphobic just as there is latent antisemitism but not everyone in Europe or the West is anti-semitic. Infact, some of the leading people who fight against Islamphobia and antisemitism are non-muslims and non-jews respectively.
