as far as them being delicious is concerned its down to personal opinion and your taste buds.
I have visited Iran during the 80s.

the strictly vegetarian food that I ate and actually enjoyed was fruit and bread with water or a soft drink.
nothing as exotic as the pictures below that are just for reference, I had fruit and herbs rice and mostly with Naan wraps or specially made naans

the vegetarian food I enjoyed and preferred over the meat food while my visit to different Iranian cities was very simple and humble but very filling, tasty and nutritious.
I had seed, vegetable or fruit naans on their own with tea or soft drink.



following is cheese and herb platter I must say I didnt get the chance of eating this but I might try it at an Iranian restaurant.

Aush is the most famous Iranian vegetarian soup. There are countless different kinds of aush all over Iran and sometimes meat or chicken can add to this soup.

alot of our main dishes have meat like ''ghormeh sabzi'' but you can take out the meat from their ingredients and add vegetables like eggplant or any thing you like

Well you are making threads of these vegetable dishes of different countries.
But you would not find many here in Afghanistan pakistan and Iran. Though the poor always eat vegetables and daalsor chicken which is also cheap in all three countries. Though they would not like to accept it.
The only Muslim country that actually eats vegetables is turkey.
In Turkey the Royal dishes are not of meat but vegetables. While you would be dazzled with their stakes, donors, kebabs of thousands type. But the majority of the cousine consists of vegetable dishes and vegetable soaps.
Even in breakfasts they eat raw cucumbers and tomatoes. Look have you ever seen a nation eating cucumbers and tomatoes in breakfast?
I have not. And they eat lots of vegetable dishes.
Chi kofta, imam baladi are some of the vegetable dishes. You would find many.
Even their shorba is made of daal. And instead of eating it with roti or rice they drink it like soap.

agreed ME and PK dose not eat a lot of vegetable dishes those usually are side dish not the main

Fortunately, this vegetarian sh!t culture never entered Iran, we didn't feel such paradoxes in ourselves!

nonetheless, Kate Gojeh is a very simple and simultaneously delicious food, it's mostly served alongside yoghurt.

Few years ago, a poor villager named Abbas Barzegar gave shelter to two German tourists and hosted them with this meal. 3 months later, friends of those two tourists knocked his door and demanded the same food, now he is an internationally famous man! (and rich)

I will not ask beyond Iran. In fact I shouldn't have asked about Iran also. Because I have heard in the entire world only 3-4 regions have genuinely delicious food - Pakistan, North India, Bangladesh and Afghanistan. And I have doubts about Afghanistan also.

Or most probably these are the countries you claim to be akhand bharat. And wanted to occupy them back.
I have heard Afghanistan and Pakistan being claimed by akhand bharat. But I have also seen lots of bhakts claiming Iran too as the part of their Hindu land. Though it has no truth. Persia was never under Indian occupation. Parts of India or now Pakistan were under their rule that is true.

Well jokes apart.
Their is something wholesome about our food.
In pakistan I see certain difference from India as I have seen your cooking channels. You have become sort of commercialised while in pakistan people prefer to stick to old recipes.
Butter was not so heavily used as in India. You guys put butter in everything and think it would taste better. Well that's not the case. Butter is good in dishes where it is required. For example karahis are made with butter or pure ghee. But ordinary vegetable are made with ordinary oils. With bhindi or others butter won't do good.
We use less haldi. You guys put lots and lots of haldi we don't.
We don't use kashmiri lal mirch or paprika for color a lot. Some people does. But it is not practiced. Sindhi mirchis are fine for us.
Food is heavy on chicken as it is cheap.
Though true good cuisine is made from mutton. Beef was surprising not eat that much.
We still don't have dishes like palak paneer, butter chicken or chicken tikka masla. And that's fine.
People don't go out to eat vegetables in restaurants. Usually people go out to eat barbecues and karahis and roast stuff.
Vegetables and daals are avaliable in dhabas style small hotels where poor people eat.
And surprising they have vast verity of vegetable dishes. I have some university friends, while working on final year project they took me to some dhaba. The dhaba has a vast assortment of daals and vegetables. Mash ki daal was divine. Kari was awesome.
Since I am from punjab people eat sersoon ka saag with love. My mother cooks it a lot.
Also another common dish is yakhni pulao. Yes we call it biryani (karachite can balme us).
Fish is only eaten in winters. That is a rule. I don't know how they do it in karachi. But in lahore everyone was eating fish in winters and even if you want it don't get good fried fish. Fish restaurants only work in winters. In summer they do other stuff.
So only fish you get in summers is frozen fish. And in winters inky river fishes is avaliable.
You can find all American fast food giants. Even the ones Americans have not heard off. And people love them. And yes they have no vege alternatives. You cannot find anything vegetable in macdonals or any burger joint. Even their salad is made of chicken.

And yes food is spicy in punjab. And in villages it is less spicy simple. So is the case with sindh. But in kpk, gb and balochistan really less spices. But their good is awsume. You see everywhere baloch and phustoons restaurant. Whenever you are tired of eating your food too much. You go there. They work meat best. Without much spices. And people of punjab and sindh are fast developing the taste. Specially people of karachi.
