The real question actually is if Turkey is really going to attack any French assets that sail through Cyprus EEZ. Most likely no.

Turkey did nothing when the French aircraft carrier and its escort sailed through Cyprus EEZ,patrolled Cyprus block 8 and sailed through "mavi vatan". French navy ships regularly sail through those areas. So.
And France can not do anything while Turkey continues drilling operation or conducts sea trials in EEZs claimed by Southern Cyprus which is the recognized state by France.
It is obvious neither Turkey or France would fire a single bullet at the area. Furthermore, any ship has right to sail freely in international waters, you are also aware of this but just bringing this matter up as if France was not respecting sovereignty of Turkish state. EEZ has economical purposes only (and you also know it)
By deploying military means to those areas it means France doesn't actually care or recognize Turkey's sovereignty claims in eastern Mediterranean. That says everything.

The question is, does islands have right to claim EEZ? I guess double standards apply in here, some islands have, some islands not, it is up to interest of some countries about those EEZs.
Whether TRNC is recognized or not, it doesnt change the fact the island is divided through the middle and the southern cyprus can not rule over the northern part I dare French soldiers to step through border if they dont recognize it. Ignoring some people does not remove them, they are on that island and ruling.
You should be aware as well, unification has been halted due to racists speeches risen from southern part in the past.
Southerns ignored the TRNC and they claimed EEZ as if the islands was only theirs and handed over EEZ rights to some countries they have decided, while actually governing the island partially. It is a dilemma, France recognizes the island as a whole,but ignores the EEZ claims made by part of the island.
And you might have some history knowledge on why Turkey had to invade Northern Cyprus, dont you?

This is not about France. Like it or not Cyprus, or S Cyprus, is the only internationally recognised entity and,furthermore, is a EU member state.France isn't acting alone but has the full backing of the rest of the EU.
As far as I'm aware Greek Cyprus has pledged to hoard the gas money in a trust fund to be divided with the Northern part of the island, so, it's not like they'll keep the money for themselves only.
Turkey is trying to get a share of the pie with no legal standing....a fact that is recognised by the US to.Not that it matters....judging by the gas market lately, no one is scrambling for Cypriot gas any soon.

If you mean "EU can force Greece's reality, through economical and military sanctions on Turkey", you better know unilateral decisions never brings peace or any solutions to disputes, especially when those disputes are regarding to EEZs, it is a dead end in terms of international laws.
EU should encourage Turkey and fellow countries in East Med to gather around the table, and make a fair deal about it. After all, EU is believed to be cradle of civilization thus they should act as one, right?

And why should we trust Southern Cyprus on that? How would they share the revenue to a state they don't recognize? How can Turkey be sure once recognizing drilling activities of Southern Cyprus as legal, they wouldn't bail out by stating that Northern Cyprus is hostile to them because of presence of the Turkish troops on the northern side?
The matter is tough, Southern side has taken actions on their own and rushed for gas research and awarded some companies without properly negotiating it with Northern side. They have ignored Turkey's presence in region and this is the result.

Sry,I missed the last part of your post and especially the last map.As I've said, I have no real clue about the 6/12 miles dispute and, being honest, it seems out of place to bottleneck Turkey like that just because Greece owns a massive island chain in the Aegean but the Cyprus dispute is another matter.
