Spices are extremely beneficial for your health if you have them as they should be in a balanced way. Everything Asians do borders in the extreme for their quest in taste rather than health. You can not expect spinach to retain any nutritious value being over cooked in desi ghee and fist full of spices. That's the receipe for disaster.
We should steam and boil more which will retain the nutrients in the food but ghee is a bit of a problem, even me I need my chappatis with ghee even though I know it is bad for you I still spread it and been using it for a long time.
