The concept of dalit seats is based on the historical disadvantages of the society. So if they become muslims does that they are no longer disadvantaged? No. The reason they are not given seats is because of state religious discrimination whereby two people of the same background are treated differently because one is no longer part of dharmic religions. i.e It is a anti muslim law
dalit is a caste under dharmic religion, hence the supreme court and governments decided to give them quota but if a person changes his/her caste and converts to a different religion then the person would cease to be a dalit and would have apply under that religions quota, the issue is if the dalit are still treated even after converting to that religion then they should remain a dalit under dharmic religion.
