Spicy omelette

Serves: 2

Ingredients

• 4 eggs
• 50 gr (1/2 cup) feta, crumbled
• ½ tsp chili powder
• ½ tsp smoked paprika powder
• Handful of chopped fresh chives
• Salt & pepper
• Butter, to bake in
• 50 gr (2 oz) dry sausage, in slices
• Handful cherry tomatoes, in halves
• Handful fresh peas

Instructions

1. Whisk the eggs, add the feta, herbs and spices
2. Season with salt & pepper
3. Heat a bit of butter in a pan
4. Add the eggs and top with the sausage and vegetables
5. Lower the heat and put a lid on the pan
6. Bake the omelette on low heat for 25 minutes
