Difficult answer. Sher Shah Suri introduced the rupee and brought back the GTR, Muhammad Ghauri not giving up despite his losses is inspiring (as is the fact that in his last moments he was praying), Ghiyasuddin Tughlaq managed to conquer most of India within only a couple of years, Aurangzeb Alamgir created the largest Muslim empire this region has ever seen, etc. Many of them have done great things.
However, at the moment I'd say I am partial to a lesser known individual called Sharullah Khan. He was a Punjabi general of the Mughal Empire during Akbar's tenure and was devoutly religious (despite Akbar's dissatisfaction with this), while also expanding the Empire greatly and defeating numerous rebels within the empire. He also fought against corruption in the Mughal army by introducing Dagh o Mahali, and sometimes ran administrative affairs within the Empire.
