Martial race is a British term used by the colonial British imperial army. Martial races are those races who were fiercely loyal to the British crown, thus were considered as good for fighting as British soldiers.
Before the Sepoy rebelllion in 1857, Bengalis, Marathas also formed a substantial number of the British soldiers. In fact before 1857, anyone and everyone could join the British army. However after the 1857 rebellion, the British stopped recruiting anyone and everyone due to trust issues, especially from the Bengalis and Marathas, as they were the main conspirators of the 1857 rebellion.
So, after 1857 the East India Company dissolved and the British government took control of India. Of their many policies one was the martial race policy. This policy was that the British army would recruit soldiers from only some races who are known for their loyalty in order to reduce the chances of rebellion like what happened in 1857.
